Monday husband wakes up and is not feeling well at all ugg. It is pouring and historic flooding everywhere. We are fine but no day to be on the roads.
Well Tue he is worse long story short he spent a day and half in the hospital with RSV.
He is home and better and should be fine for Christmas!
Before all this happened I made mini mincemeat pies. I made the crust with lard and butter. And let me tell you this is crust like Grammy made. So flaky and tasty. I will make crust like this always now.

Tomorrow morning is the winter solstic. It will be nice to see the light returning bit by bit.

We will be laying low until Christmas day. My shopping is done. I need to make a couple of batches of cinnamon rolls to deliver the 24th.
I have much to be thankful for.

Glad hubby is better. I've been wondering if I should get the RSV shot. I no longer get the Covid shot after 3 since it really doesn't prevent anyone from getting covid. Every year I get a flu shot tho.
Oh my but that crust does look just like my grandmother made!!
So sorry to hear about hubby but happy to hear he is on the road to recovery and will be well by Christmas.
I, too, will value every minute of daylight we get back!

Your weather is crazier than ours, we had flooding, but my area was fine.

Poor hubby.... It's a good thing, though, that he went in when it did. RSV can get out of control quickly. Mincemeat pies - now that's a blast from the past. I never cared for them (actually, I'm not a huge pie fan to begin with), but they were one of my dad's favorites. Happy Winter Solstice to you. ~Robin~
I'm glad hubby is home and doing well. Isn't it weird that in this day and age where we have antibiotics and so many life saving meds that we still have all these viruses that keep mutating and giving us problems? It's certainly has been an unhealthy last few years. Your crust does look amazing and I was just talking about using lard with some friends. I've never used any but it looks like a winner! I hope the weather is better for Christmas in your neck of the woods. Now back to baking for me! Take care Cathy!

Not a family secret I used king arthur old fashion 2 crust instead of 1/4 c of crisco I used lard.

sorry about all the rain we are to get that here this week, still warm temps for this time of year.
I learned to make pie crusts with lard-really is the best way to make them-especially if you can find a quality lard from a butcher shop

He is on a pool team of 4 men. 3 of them came down with RSV about the same time and one of 5hem has covid with it.
The Doc in the hospital said a lot around right now.
I'm glad that David is feeling better. We had a lot of rain here too and we have no snow. The power was knocked off and there are still some New Brunswickers without power. We were lucky and the power came back on after a few hours but again we were not affected because of our Generac generator.
The mincemeat pies look delicious. I'm a pie lover. I made three Tourtiere meat pies, and two hand meat pies today. My Mom used to make them for New Year. I make them to give away. I use pure lard too for the crust but haven't added some butter.
