The Scent Of Fall

We had a bit of rain yesterday and just before sunset voila!
It was a double rainbow but the top one was so faint I could not get it with my phone. 

I am walking everyday. when the leaves fall and start to dry up there is an earthy smell that I love. If only candles smelled like that. 

Today we took a ride to an apple orchard we had never been to before.

And after seeing this I have no  idea what took us to long to visit!
The views were amazing!!

A family cemetery, such a lovely area. 2 young brothers run the orchard now.
He said his parents bought the property in the 70s. What a legacy!

Just a little cooking how to. I had baked a butternut squash.
I cut the squash in half scooped out the seeds added bit of butter over it about a tablespoon over the whole thing. baked until soft at 400.
No need to peel. Just scoop out after baked. 
 I had some leftover from having it as a side dish with another meal. 

I took the leftover squash added some chicken stock until I was happy with the consistency and then added a little bit of cream to make it rich. Add what spices you like, I had an immersion blender to make it smooth. It was so perfect and a great way to use up leftovers. 

My daughter and I both love dilly beans. I am still getting string beans but not a lot. I had enough to fill this jar. I had just eaten the last of store bought dill pickles I had. I boiled the leftover pickle juice poured it over the beans in the jar. put it in the frig. And oh man perfect! I am hoping to make another jar before my beans quit for the season.

That view was amazing...even in the pic you took. I love squash this time of year, but not a fan of dill except in pickles. My grands will eat dilly anything...including watermelon rinds. Janice

Love the view from the orchard! We've been to our local orchard but will make a few more trips during this season. We used to have so many orchards here but now just a couple are left. We finally got some rain last night! Smells like a Fall now! Your squash soup looks amazing. Thanks for sharing your recipe. Have a lovely Fall day!

We need the rain here in the Upper Valley. It's been dry all month except for one brief shower early in the month. Our favorite orchard is Patch Orchard. The views west from there are stunning from their top of the hills locations.

You're right...there is nothing better than the smell of fall leaves. I love squash so much, but not as a soup for some strange reason. I used to bake my squash in the oven too...or boil it (peeled and cut into pieces) on the stove and mash it but now generally just microwave. Same great taste just a fraction of the time. Those cemeteries are amazing. I always thought a family cemetery would be wonderful...and you know how I envy you walking by the little old one you have so very near. ~Robin~

I've never had dilly beans. The orchard looks like a fun trip. I absolutely love squash, unfortunately, my husband dislikes it. That makes it hard to find a time to make something of it.

I've never thought of using the dill pickle brine to pickle my own beans. I have pickled beets using the brine from sweet mixed pickles. That works well too.
I should make Butternut Squash soup again soon💗.
