Cooking Weather

Yesterday I made a quiche a very delicious quiche!

I used puff pastry for the crust. I have lots of Tarragon in my garden,
it is a keeper. If my husband liked mushrooms I would have thrown in a handful of those.

With the left-over puff pastry, I made an apple tart for dessert.
No real recipe just an apple sliced thin with sugar and spices.

These Scottish rolls were amazing! I would give the recipe, but it is all in grams and to convert it is not precise. One conversion is .88 of a cup. I have a kitchen scale I use.

I made meatballs and sauce with some whipped ricotta on the top for an appetizer. I froze several bags of meatballs for future use.

And because I read that thyme in honey can be used
for sore throats or cold symptoms. So, I am going to give it a try.
Take a tsp straight or put it in tea. Let's hope I never have to use it.

The two-person, gingerbread recipe came from blog
The English kitchen

2TBS of granulated sugar
2TBS of room temp butter
1 large egg yoke
1/4 cup of molasses
2/3 sifted flour
1/4 tsp baking soda
1/4 tsp cinnamon
1/4 tsp ginger
1/4 tsp cardamom
1/8 tsp nutmeg
1/8 salt
1/4 cup of hot water.
oven to 350 degrees 5x7 (or what works for you) greased pan
30 minutes
I mixed the wet and then the dry and put them together.
I kept the hot water until last and whipped it in.
My one tip is at the end of cooking and watch it so not to overcook it.
Let it cool a bit. It was delicious!

We had a liner put down our chimney, sealed, and a cap put on to keep out the rain and snow. Not cheap but very much worth it.

My poor gardens are drying up I try to water sparingly as we are on a well. These little yellow flowers are from my aunt who died a few years ago at 97 and they were from her mother's garden. (my grandmother)
She called them golden glow. Not sure that is the true name of them but that is what they will be as long as I am here. I thought I lost them all and voila here they are this year!!
The weather has warmed up a bit 80 but still dry and a breeze now and then. Hopefully rain coming in Thursday night.
Have a great rest of your week.

I am with hubby. No mushrooms for me!
I wish I liked to cook and bake but those are four letter words for me...lol!
The apple tart sounds heavenly.
Very dry in northern Ohio and today we are up around 80*, but the cool nights and mornings are so welcome. Hopefully we will get some rain soon. I grew up on well water and you really must be frugal during drought-like weather.

You are just baking away there girl - things I have never seen before. Very interesting though. So, on a well - do you have to be careful of using too much water. I agree baking makes fall seem more real.

It's raining here right now, but it's been very dry.
You've been busy. This cooler weather makes me want to cook too. Thanks for the gingerbread recipe.
