And finally, a bit of spring! I cut these a few weeks ago.
We are gathering for Easter this year. We missed Christmas for various reasons. Everyone seems excited to come so at this point I believe the head count is 23 kids and adults. I just pray for nice weather as we will have an egg hunt rain, snow, or shine. This will be the first Easter without my husband's sister. (We will be thinking of you Aunt Sue.)
I need to stop the snacking!!! I have a winter 5 lbs that crept on. We are snowy, muddy, and cold, just waiting for spring. To get out for a daily walk.
And finally, a bit of spring! I cut these a few weeks ago.
I made a cake from a recipe I found on a tea website. You infuse the butter with tea. It is made with almond flour and 6 eggs so higher in protein and a bit lower in carbs as it does have sugar in it.
It is delicious! Husband loves it, I used an apple cinnamon tea I had but you could use any tea you like.
We bought some maple syrup from a young guy who went to school with our daughter. Still warm and fresh, yummy. It will go in someone's Easter basket.

Thank you for the condolences on my Stepfather passing. He will be missed he was a really good guy.

Yes, mountains are always lovely to see and we do have a lot of them here in New England. The cake made with tea sounds interesting. Belated condolences on the passing of your stepfather.

Oh, to see mountains like this in person regularly! It would be a dream. The good Lord knew not to have me live close by them because I would never ever be at home. :) Sounds like you have a wonderful Easter planned!!!!!

I love Forsythia, yellow bells we also call them. That cheese tray is too true for me! Keep walking and keep fit! (Advice I keep aiming for!)
It's hard not to snack when you are inside all the time. I have never heard of a cake made that way, but it sounds good. I hope you have a greaet Easter celebration.
Wish we lived closer - I'd trade you half of the "coffee" cake I made for half of your tea cake. I'd be taking photos of that mountain any time I could as well. Probably well I don't live out east as I am so easily distracted by things of beauty or even if not beautiful, of interest, and would surely be in an accident due to gawking. I must send that picture of the woman sneaking cheese off the tray. One of my girls is such a cheese fiend.
I have also gained some pounds over the winter and this is in spite of all the walking I do. Maddening, isn't it!!!
More snow yesterday and rain coming in tomorrow. It's been a long Winter. Wish the Forsythias were blooming here. The cake sounds Yummy. We are going to have chocolate cake tonight with mint frosting. Hope it tastes as good as it looks. LOL Hope you have wonderful weather for Easter. Janice
I never think to cut the forsythia to force the blooms. I know about those extra pounds too.
That cake sounds delish. We're doing an egg hunt with the grands when they come to visit this weekend as we won't be seeing them over Easter. I've got to get busy stuffing eggs!

I've been away from the blog for a bit since we're having a bit of a health crisis with our youngest son. He's in the hospital and I'll post about today. I don't have any forsythia here but I want to get a bush. We had snow the other day but yesterday it melted. I'm hoping that's it for now. How wonderful to be able to see mountains. back in the 70's I lived in Colorado for awhile near mountains-I missed them so much when i left. Your recipe sounds delicious Happy Easter-enjoy your family
