What? A Secret Weekend?

I have not forgotten the reason for the long weekend.
thinking of those who gave all for our freedom.

I found we have 2 lady slippers on my hill they are
very precious in NH so I feel very honored they chose my
hill to grow.

A little sweet woodruff in my garden. 
It has been a weekend of weird weather
Pouring rain then the sun comes out and heats it up.
Then back to thunder and down pours again.

I spent the sunny time outside in the garden.
The rainy part washing up my found wool. 
I had to take wool inventory cause !!!!!!

I may or may not have a fabulous wooly 
weekend that any rug hooker would swoon over coming up.
There may or may not be a beach involved, sunsets, wine, SHOPPING
ALL THE HOOKING SHOPS,lobster,and amazing friends.
Just saying may or may not, stay tuned ;)

Gardens

I wish I could say this is my garden...

But it is not.....

These beautiful gardens are my next door neighbors.
They invited us to sit on their porch and enjoy the gardens for awhile when we were taking a walk.

We took it as long as we could with the black flies eating 
us to pieces. and decided to go on with our walk. I really love our road it is so pretty and peaceful..

I got a new magazine with out paying the cover price!
We sell used magazines at the store and someone dropped this off today it is current and I got it for 1.00!
There are some months we sell between 30-50 magazines 
Ok on to the zucchini crust recipe.
I will tell you it is not super quick but super easy.
It comes from This website when I made it I made two 
smaller ones from the same recipe and it is very yummy.

Zucchini Pizza Crust

Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Servings: 3
A healthy zucchini pizza crust!

ingredients
  • 4 cups zucchini, shredded
  • 1 egg
  • 1/2 cup mozzarella, shredded
  • 1/4 cup parmigiano reggiano (parmesan), grated
  • 1 teaspoon oregano or Italian seasoning
  • salt and pepper to taste
directions
  1. (optional) Microwave the zucchini on high for 6 minutes, let cool, place it in a tea towel and squeeze as much moisture out as you can.
  2. Mix the zucchini, egg, mozzarella, parmesan, oregano, salt and pepper, press the mixture onto a baking mat or parchment paper lined baking sheet and bake in a preheated 450F oven until lightly golden brown, about 15-20 minutes.

Note: Step 1 is optional and the recipe will work without doing it but it helps make it easier to remove the moisture from the zucchini. If you use raw zucchini the bake time for the crust will be closer to 20 minutes than 15.
Note: You can add 1/4 cup flour, or rice flour, or almond flour, etc. to the zucchini mixture which will help make the crust stronger but it also makes it a little bit tougher.

A Long Winded Post..

The warm weather has arrived although our nights are
still cool. I cleaned the porch and have it already for our 
summer lounging.

Thursday a friend and I headed to a church sale I got these for
2.50 a bit wilder than I am use to but I am trying to break out of 
my old boring self

I also got this mug and bowl both hand thrown.

The deal of the weekend this yellow ware bowl
for 3.00 oh how I love it.

At a local thrift I got a quart of paint for 1.00
and these two little things I love the mug some day
I will get to Prince Edward Island and see the Anne
Of Green Gables house. That was my daughter's all time 
favorite book and movie.

About 3 weeks ago I tried on a pair of Capri's and
they were not going to button no matter what I did. Ugh
so I went low carb. I have lost some
weight and I can get into my pants again. This is a zucchini crust
that you can use for lots of things. 

I used it to make a pizza, it was yummy and I would make
it again.

What A Weekend

Miss B stayed over night with us on Friday her parents
were camping and they wanted to get set up and a 
night out alone. We were happy to help. On Saturday we
Met my daughter and son in law at the camp ground where 
B discovered the jump pad, now is that a happy face or what?


And this is B talking her Pepe into joining her. I wish I had a picture because he did and did they have a ball! He was so tired when he got home it really is a work out.

Today was beautiful so we got up and cleaned screens and windows
The whole house is done just look how shiny that window is:) 
I had some of this cleaner from stonewall kitchens left from last
year the whole house smells so good!

After window cleaning we went to a very small restaurant
to have a sandwich we sat on the porch and listed to the water.
So peaceful and lovely.

We wanted to walk off our lunch so we hiked into this waterfall
it is a very short hike and so pretty when you get in. It is called profile falls there is suppose to be a face in stone on the right.

So spring has sprung here in NH thank goodness.

A couple plus weeks ago I decided to do the low carb thing
as I was very good to myself over the winter. I have seen Katie
Couric talk about 10 days without added sugar. I am here to tell you
I have done it and I do feel better and I did lose some pounds. The first couple of days I thought I was sick I had a headache and didn't feel good. I will not go into this but if you are interested google katie she has been on all of the shows talking about it.

I hope your mother's day was a great one. And for those of you like
me that no longer have their mothers I know how it feels. My mom lived in my house the last 14 years of her life to not see her daily has been hard even though it has been 5 years I still miss her just as much.

Weekend News

Well it was time to trade in the old phone and become a little more 
up to date. We are about 10 years behind in all technology we finally have
phones that have internet holy cripe what will they think of next???

Went to the ta da dump today and found another cubbie that is
larger than this one soooo I have a plan to get them fixed up and in my wool
closet amen!

I tried selling on ebay last week for the first time and did pretty good if I do say so myself.
It felt great to get rid of some things that have been laying around and a little extra cash.
I want to make an ebay button for my blog but have no clue where to start.

We had our hooking guild meeting on Saturday no camera ugg.
but lots of beautiful rugs. We are holding a hook in, in October sure hope 
I can go this year. 
It rained and was cold most of the weekend but when the sun did come out the temps
went up fast.

So that is my week in a nutshell, a little grocery shopping and a little phone shopping.
But with all we have been through in the past 3 years boring is good.

Oh we are learning how to play cribbage so far so good!
